I also am celiac, so no gluten for me either. But the cookie could be made GF, its the peanut butter thats has no workaround.

Not really because for the gluten free grains to stay together in baked goods, a lot of shortening is required, one serving of GF pasta is about 2/3 the amount of one serving of Gluten pasta.
